Spicy Mexican Rice

Ingredients

Basmati rice         :    1 cup
Oil            :    2  tsp   
Salt             :    as needed
Chilli Powder         :    as needed
Tomato            :    2
Capsicum            :    2
Water            :    2 cups       

 

Method

Cut tomato, capsicum into long thin slices.       
Set microwave to high power.
In a vessel, mix half of cut tomato and capsicum with oil and keep it in the oven for 1 - 2 minutes.
Mix rice, oil, salt, chilli powder and keep it in the oven for 12 minutes.
Stir the contents once or twice inbetween.   
Remove from the oven.
Decorate the rice with the leftover tomato and capsicum, before serving.
