Ingredients

Mixed vegetables        :    2 cups
Salt            :    as needed
Turmeric Powder         :    a pinch

To grind

Grated coconut        :    2 tbsp
Green Chilli        :    5
Cumin             :    ½ tsp
Sour curd            :       1 cup       
Coconut oil        :    2 to 3 tsp

For seasoning in stove

Mustard            :    a little
Curry leaves          :    a few leaves 

 

Method    

Cut vegetables like white pumpkin, carrot, beans, green plantain, drumstick, yam into inch long pieces.
Set microwave to high power.
In a bowl add all the vegetables and keep it in the oven for 5 -6 minutes.
Set microwave to medium power.
Stir the vegetables, close the bowl with a lid and keep it in for 4 -5 minutes.
Grind grated coconut, green chilli, cumin in a mixie.       
Set microwave to high power.
Add the ground paste to the vegetables, mix well and keep it in the oven for 2 -3 minutes.
Remove from the oven.
Add sour curd and coconut oil.
Heat a little oil in the stove, add mustard and when it splutters, add to the avial.        
Add curry leaves, stir the contents well and serve.
